Prep Time: 30 minutes; Yield: 24 cookies
1/2 cup firmly packed brown sugar
1/4 cup butter, softened
1/2 tsp vanilla
1 egg white
1 cup all-purpose flour
3 tbs unsweetened cocoa
1/2 tsp baking soda
1/8 tsp salt
- Heat oven to 375F. In a large bowl, combine brown sugar and butter; beat until light and fluffy. Add vanilla and egg white, blend well.
- Add flour, cocoa, baking soda and salt, mix well. Stir in
chocolatepeppermint chips. Drop dough by teaspoonfuls inches apart onto ungreased cookie sheet.
- Bake at 375F for 8 to 9 minutes or until set. Do not overbake. Cool 1 minute, remove from cookie sheets.
