Champagne Limoncello Cocktail

I.love.pinterest!  If you're not a member and want to be one, leave a comment with your email and I'll send you an invite.  If you are a member, you should follow me!  Anyways, I find a bunch of cool recipes and crafts and inspiration and home stuff on pinterest.  And some of the stuff I've actually tried.  Really it's only like 0.5% of things I've pinned I've tried, but that's a start!  So it's about time I share the recipes I've tried.  Like this one...
Don't mind the fancy "champagne glass"

Champagne Limoncello Cocktails
Ingredients:
8 (3x1/2") lemon rind strips
8 tbsp Limoncello (lemon flavored liqueur)
4 tsp fresh lemon juice
1 (750ml) bottle brut Champagne, chilled

Instructions:
Roll up each strip of lemon rind; place 1 in each of 8 champagne flutes.  Add 1 tbsp liqueur and 1/2 tsp juice to each glass.  Divide champagne evenly among glasses.  Serve immediately.

Alterations:
I didn't bother with the lemon rind bit.

Optional:
Rim each glass with sugar - rub a cut lemon wedge on the rim of the glass, and roll in sugar.

This drink paired well with our post egg hunt egg salad sandwiches on Easter.  Let's just say, I had a gigantic bottle of brut, and it was all gone by the time lunch was over.

Butter Beer

Have you ever watched Harry Potter, and while the gang is off at the ... place where they go during breaks ... wondered, "Hummm, I wonder what that butter beer stuff tastes like?"

Well, I'm here to let you know it's yummy.  I'll tell you the ingredients that I used, but the proportions are up to you depending how strong or weak you'd like it.

Cream Soda
Butterscotch Schnapps
Butterscotch (ice cream) topping

For sweeter, use more topping.  For more of an adult kick, use more schnapps.

Some recipes online called for melted butter.  I'll admit, I scaled it back and tried it.  And, well, I didn't like it, but it did foam better with butter.  I'd stick to the sugar and not the fat stuff though.

Seven Layer Cookie

Who doesn't love a nice toasty alcoholic beverage on Christmas?  And that's exactly what I made to take to our family Christmas gathering, 24 servings to be exact.  For 10 people.  And it disappeared.  Quickly.  Burp.  Excuse me.  (Sorry, no picture.  How can one balance a camera and a beverage at the same time?)

Ingredients
3/4oz Godiva Liqueur
3/4oz Coconut Rum
1/2oz Butterscotch Schnapps
1/2oz Partida Anejo Tequila
1/4oz Frangelico
1/2oz Baileys
1/2oz Amaretto

Instructions
Garnish rim of a martini glass with crushed cookie crumbs.  Shake all ingredients in a shaker with ice and strain into a martini glass.
Comments
  • I couldn't find Godiva Liqueur (BevMo was sold out!), so I used Cask & Clevers Chocolate Temptations.  I have no idea how it effected the intended flavor, but it was still good!
  •  Um, I totally didn't mess with crushing cookies and rimming glasses.
  • Or shaking with ice.
  • Or straining into a martini glass.

1800 Tequila Sunrise Sangria

Ummm... You can pretty much bet that I'll be making this this Sunday.

Ingredients:
1 Orange
1 Lime
1 full bottle of Prosecco
1 cup Tequila
2 cups Ginger Ale
1/2 pint Raspberries

Instruction:
Slice half the oranges and limes into circles, then slice in half to form half moons.  Squeeze the other halves of both fruits into a large pitcher filled with ice.  Add the Prosecco, Ginger Ale, and Tequila.  Stir, adding whole raspberries and remaining orange and lemon pieces.

Sit back and enjoy.  (The recipe didn't say that part.  I added it.  'Cause doesn't it look like a sit back and enjoy kind of beverage?)

Girl Scout Cookie

This is one of my favorite winter drinks!  It's warm, and leaves you a little fuzzy feeling. 

Ingredients:
Hot Water
Hot Cocoa mix
Peppermint Schnapps
Candy Cane and/or Marshmallows (optional)

Instructions:
Make yourself a cup of hot cocoa, leave out an oouch of water.  Top off with peppermint schnapps.  Quite honestly, you be the judge of how much booze you want mixed with your hot chocolate.  I put in 1/2-1 shot worth.  If you're a goober and still have candy canes left over from Christmas like me, then put one in and finish "stirring" with it.  Marshmallows are a must for me in hot chocolate, but it's totally up to you if you want to use them.

Now, go put your pj's on, build a fire (if you can), pop a movie in, and curl up under a blanket.  Those are direct orders.  Go!

Hot Buttered Rum

OMG this recipe is so good! My aunt and uncle make it every year when we go down there for Christmas.

Make the whole recipe or cut in half. Store in the freeze and it will last you awhile.

Rum Mix
1 lb. butter
1 lb. brown sugar
1 lb. powdered sugar
1 qt. french vanilla ice cream
3 tsp. vanilla
nutmeg
cinnamon

Freeze mix for later use.

Add 1 tsp. rum mix to jigger rum and 1 cup boiling water. Top with more nutmeg and cinnamon.

Me, personally, I like it with about 2 tbsp. mix and no rum.

Prepare to wear it on your hips.

Latin Lover

I know it's a bit too chili outside for a recipe like this. But it's too good to wait for warm weather to share. I had this first while attending a bachelorette party about...oh, 7 years ago...

Ingredients:
4 tbsp. frozen pineapple juice concentrate*
2 tbsp. frozen orange juice concentrate
2 tbsp. frozen cranberry juice concentrate
1 tbsp. lime juice
2 oz. Malibu rum
1 1/2 cup small ice cubes.

Instructions:
Combine ingredients in a blender. Process until smooth.

Serves 2.

*I've had a hard time finding frozen pineapple juice. So I'll get frozen orange/pineapple and put 6 tbsp. of that in place of the pineapple and orange juices.

Cowboy Margarita

The easiest, quickest no blender needed margaritas eva'!

This recipe is world famous, at least you'd think it was in my family. I don't know who invented it, but I will always give my cousin Claude props and kudos. At every family event that happens at the ranch, about 12 handles of tequila is consumed in this bad ass drink.

The recipe:Take straight from our little flip recipe holder that Aunt Kate gave as a Christmas gift many years back. This recipe and recipe book has seen a lot of love and wear.

Diet Lemon-Lime soda can be used for a "diet" version. And I always add an extra can of soda. It's a super strong recipe without that extra soda. Still good, but it'll knock you off your feet.

So go, mix, partake of the Cowboy Margarita over this festive Labor Day weekend!
